Is it true that every H&S brush from the Ultra to Infinity all share the same head design and parts? I could make an Ultra into a .15 brush?
 
Yes that is correct you can add the old Focus and Colani to your list. But remember you have to change as set meaning nozzle, nozzlecap and needle. đź‘Ť
 
Yes, and as mentioned you need to change as sized sets -with the exception that the .15 and .2 use the same nozzle (or air) caps.
 
Not really, well, maybe a little - the differences between models don't stop at the nozzle, or air cap. The Infinity uses different guts than the others that allow for adjustment of the needle spring. It also has the best finish in the line, along with unique trigger parts and tail sections...
It's silly but I show people my airbrushes quite often, the infinity line consistently gets the most reaction when I open the box. The industrial design just looks and feels elevated.

I personally appreciate the adjustable needle / airflow regulator on the back of the handle. A lot of people don't need them because of years of trigger control, but when I need that perfect fine line of flow, this is a nice option so I don't accidentally overspray.
